Chicken Nuggets with Sweet potato and Rainbow salad

Ingredients for baked sweet potatoes

  • 2 sweet potatoes
  • 3 tablespoons olive oil
  • salt and pepper to taste
  • 1 teaspoon paprika

Steps

1. Preheat oven to 180 degrees C (350 degrees F).

2. Wash the potatoes and then cut them, along with shell, in long strips.

3. Add the oil, salt, pepper, and paprika. Mix everything by hand so that each piece of potato is covered with oil.

4. Place the potatoes in a baking pan lined with paper.

5. Bake potatoes in the preheated oven for about 25-30 minutes.Turn wedges every 10 minutes or so to get it evenly browned.

Ingredients for Chicken Nuggets

  • 400g chicken
  • 100g of corn flakes
  • 1/2 cup flour
  • 2 eggs
  • 1 tablespoon mustard
  • oil for frying
  • salt and pepper

Steps

1. Cut chicken  into 1 1/2-inch pieces. Season with salt and pepper. 

2. Whisk the eggs with one tablespoon mustard.

3. Ground the corn flakes.

4. In batches, coat chicken in flour, shaking off excess, dip in eggs, then coat with corn flakes, pressing to adhere.

5. Heat the vegetable oil in a large frying pan over medium-high heat. Add the chicken pieces to the pan (work in batches if needed) and brown on each side, about 8 minutes total. Use a spatula to transfer the chicken nuggets to a paper-towel-lined plate.

Ingredients for Rainbow salad coleslow

  • 1/4 white cabbage
  • red cabbage 1/4
  • 1 red onion
  • 2-3 carrots
  • 1/2 yellow bell pepper
  • 1/2 green bell pepper
  • one red pepper
  • 200g yogurt
  • juice of 1/2 lemon
  • 3 tablespoons olive oil
  • salt and pepper

Steps

1. Finely shred the white and red cabbage.

2. Cut the pepper into strips.

3. Cut the carrot  into long threads.

4. Slice onion thinly.

5. For the dressing mix the yogurt  with  oil, lemon juice, salt and pepper.

Pour the dressing over the vegetables and mix by hand.

These are my preparations.All are incredibly tasty.
